The answer:

     In terms of nutritional content: Both experience seasonal variations, and are subject to a number of variables including timing of planting and harvesting, rainfall, sunshine, elevation, latitude, how the soil is replenished with nutrients and maintained, irrigation, etc. In the end, if you're looking at year-round figures, there  will always be differences between crops, from crop to crop, between Australia and Mexico/Central/South America, favouring one or the other, with differences in nutritional content (essential oils, protein, fibre, minerals) ranging between .005% to 1.0%. This is because chia seeds in that region are grown by small, independent farmers whose locations and agricultural practices also significantly differ: i.e. aridity and elevation of land, amount and type of fertilisers used, irrigation systems, soil conservation, and other measures.
